Today I’m going to share with you one of my favorite Crock Pot Recipes ~ TACO SOUP! It’s so DeLish and it’s a great way to get lots of beans in one meal (the only way I can get my kiddos to eat them  😉 )

INGREDIENTS:

1 lb ground beef (browned and drained)

1 can Kidney/Red Beans (drained and rinsed)

1 can Pinto Beans (drained and rinsed)

1 can White Beans (drained and rinsed)

1 can Corn (drained)

1 can of Ro-Tel (I get the mild since my kids are anti-spicy!)

1 can stewed Tomatoes

2 1/2 cups water

1 pack Ranch Dip/Dressing

1 pack Taco Seasoning (I usually use only 1/2 packet b/c it gets a little spicy!)

Frito Chips

Sour Cream

Shredded Cheese

DIRECTIONS:

Here you go, are you ready! LOL! Throw all the ingredients in the Crock Pot set on Low for 8 hours and that’s it!!!

When it’s finished top with a dollop of Sour Cream, shredded cheese and some Frito Chips and ENJOY!

I would say it feeds 6! We are a family of 4 and we always have lots of leftovers.

This looks great … and I think, with a few modifications, I could make it vegan. The flavors seem so appealing. Mmm! Thanks for sharing!

I would buy organic corn for this recipe as it is the most genetically modified vegetable out there.

Do you drain any of the canned ingredients? Or just dump them in?

Reply

Super Coupon Lady May 7, 2013 at 9:16 pm

I only drain and rinse the beans, but other canned ingredients just dump in there.
